Creamy Lemon Squares

Bright, tangy, and irresistibly smooth, these Creamy Lemon Squares deliver all the flavor of lemon meringue pie—without the fuss. A buttery graham cracker crust supports a silky lemon filling that’s perfectly balanced between sweet and tart. Simple ingredients, easy steps, and a refreshing finish make this

Recipe Overview

Yield: 16 squares

Prep Time: 15 minutes

Bake Time: 15 minutes

Chill Time: 1–2 hours

Oven Temperature: 350°F (175°C)

Ingredients
For the Graham Cracker Crust

1½ cups graham cracker crumbs

¼ cup granulated sugar

4 tbsp unsalted butter, melted

Extra butter, for greasing the pan

For the Lemon Filling

2 large egg yolks

1 (14 oz) can sweetened condensed milk

½ cup freshly squeezed lemon juice (about 3 lemons)

Optional: zest of 1 lemon

Tip: Fresh lemon juice is essential—bottled juice lacks the brightness needed for this recipe.

Step-by-Step Instructions
1. Prepare the Pan

Preheat the oven to 350°F (175°C). Lightly butter an 8-inch square baking dish. Line the bottom with parchment paper, leaving an overhang on two sides to make lifting easier.

2. Make the Crust

In a bowl, mix graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand. Press firmly into the bottom of the pan and slightly up the sides.

3. Bake the Crust

Bake for 8–12 minutes, until lightly golden. Remove from the oven and let cool completely—this prevents the filling from melting on contact.

4. Mix the Filling

In a medium bowl, whisk egg yolks, sweetened condensed milk, lemon juice, and lemon zest (if using) until smooth and slightly thickened.

5. Assemble & Bake

Pour the filling over the cooled crust and gently spread to the edges. Bake for 15 minutes, just until the center is set and no longer jiggly. Do not overbake.

6. Chill & Slice

Cool at room temperature for 30 minutes, then refrigerate for at least 1 hour (2 hours is ideal). Lift out using parchment, and cut into 16 squares with a serrated knife.

Pro Tip: Wipe the knife clean between cuts for neat edges.

Serving Ideas

Dust lightly with powdered sugar

Garnish with lemon zest or thin lemon slices

Serve with fresh berries or whipped cream

Pair with iced tea, espresso, or sparkling water

27. Have you received a letter recently?

I haven't gotten a personal letter for months. Not that I write letters either. Maybe I should start. It's so nice to get mail from time to time. We should all start to send letters. I don't know that I have enough news to write a letter about. It's pretty boring. 😁🌹

I have received a letter from my doctor's office, but that doesn't count. It was boring. 😁

Have you received letters recently, and do you write back to them?

Reasons to Save Money

I want to get some things done around the house, and we’re working on it. But I really need to save for February of 2027. It will be our 57th anniversary. We're planning a 10-day cruise to Hawaii. My brother and his husband are going too. We're all looking forward to it. We have a lot of money to save between now and then. Plus, we’re going to fly first class. It's on our bucket list. Some friends of ours went earlier this month, and now we really want to go. Now, we have to save enough. Wish us luck.

What does friendship mean to you?

Friendship is everything to me. Because of good friend I smile more, I laugh more, I cry easier, and I respect anyone I consider my friend. I count some of my siblings as friends too. To me friends and family are almost the same. I feel very blessed that I have the friends I do.

How about you?

This short memoir follows Jones' early life growing up as a gay Black kid in 1990s Texas, through his college years and young adulthood struggling with feelings of unbelonging and uncertain identity.

The core of the book is his relationship with his mother, who died of heart disease when he was 26. She was an iconoclast, breaking with her family's conservative Christianity to become a Buddhist, and insisted on doing things her own way, including raising her son on her own. The dynamic between them is complex; he loves and respects her, and in many ways they're close and protective of each other, yet he doesn't feel truly seen by her. His sexuality is part of the barrier—she doesn't reject him, but is resistant to talking about it—and I also got a sense of her as a person who held others at arm's length because intimacy scared her.

But Jones is not too afraid to write about his most vulnerable, self-destructive, and howlingly painful moments. cut for content: gay bashing ) It doesn't read like he's being too harsh on himself, and it doesn't read like he's trying to make himself look good. It reads like he's found a narrative arc in what really happened rather than editing events into artificial tidiness.

Jones is primarily a poet, and the book's emotional clarity and concise lyricism bears that out. The material is heavy, but I didn't find it depressing. Rather, I felt that the fact that he's now able to write so honestly about what he's been through demonstrates that he's achieved what he's been longing for: knowing and sharing who he really is. He doesn't need to spell out that this happened for him, because when you read the book you're holding the evidence of it in your hands.

This morning in the gym, a woman some decades my senior was doing a virtual training session with another woman in between our age brackets, though closer to her than me. I could hear and see them and they could see and hear me, but it wasn't an issue - I just grabbed a kettlebell and moved to the other side of the room.

The trainer let out a gasp and said, "Look at that girl's hair!" She'd seen my braid hanging down, and couldn't help but comment.

I won't lie: it's pretty wonderful to have something about myself that catches complete strangers' attention in a charming, positive way. And I won't lie: it was a superb moment to hear someone call me a girl. Affirming and euphoric.

I hope Rob Grant would take it in the intended spirit that when I heard the news of his sudden death, all I could think was "All most of us get is 'Mind that bus!' 'What bus?' Splat!" The first six and a half series of original flavor Red Dwarf (1988–99) were a social staple of my sophomore year of college, watched primarily in my case from the top half of a bunk bed occupied by a structurally unwise number of students who would shortly branch out into whatever British television comedy we could get hold of the tapes for. It became an immediate and ineradicable part of our language. Decades later, the number of quotations from especially the first three series that have worked themselves into my present household lingo would be difficult to estimate without a rewatch. In storage with the rest of my library, I still have some of the tie-in novels, including at least one of the separately authored parallel continuations, which unfortunately for this memoriam may have been Doug Naylor's. I cannot find that I ever saw another project of Grant's except for the first series of The 10%ers (1993–96) and I am still stricken to lose yet another artist while Kissinger's heirs don't even seem to be in this machine. Not everybody has to be dead, Dave.

Have you already decided what fandom(s) to write for? If so, how about doing a little promoting? :D

We've all chosen tiny obscure canons, needless to say. But by posting here you might be able to entice someone else to give it a try — or perhaps you'll even run into a fellow fan, who can't wait to read your coming fic.

Your promo can be long or short, and contain whatever you feel like. Want to post a couple of intriguing screencaps from a movie? Quote a few paragraphs from a book? Rec the best episode of an anime or a TV series? Talk about why you love your favorite character and/or pairing from your fandom? It's all good; anything goes!

So, I was reading a Thread where a guy was warning about old drives, and how they might not last very long anymore because of degradation of the components used in them.

So, while looking for a mouse this morning, I dug up 2 old HDs (circa 2010?) and two external HDs and figured I'd kick them started and see if they worked.

And I just found the MOTHERLODE of photos!

Dating back to 2011! Including ones of my old cat, and the parentals' old cat, and friends' children as babies! WOW.

And old trips! Including a few that I thought I'd lost forever!

(Apparently, I have always taken lots of photos of builidngs!.)

Also, boy was I skinny!! Either that, or the camera made me look skinny. Oh, younger me, why did you not realise? XD

I’ve gotten back into the habit of going to the library once a week on the same day (Monday) to return stuff and pick up my holds. (This is also the best way I’ve found to get myself to return my books on time now that the library got rid of late fees) I keep thinking “this week the stack of new things will be smaller” but it never is. Surely I’ll run out of graphic novels I want to read that the library has at some point? But I’m glad it's not yet.

In other news I have now read more books this year than I did all of last year, which is pretty wild! Like sure they are all short things but I’m just reading so much more than I was few months ago and it’s really nice.

Red Threads by Ila Nguyen-Hayama—A graphic novel about a 15 year old girl in Tokyo who is invited to attend a magical school. This was very cute and charming if a little heavy on the info dumping about Japanese folklore. I really liked the main character's friendship with another girl at school.

Lumberjanes, Vol. 8-14 by N.D. Stevenson and Shannon Watters, et al.— I’d read up through Vol 10 years ago, but now I’m at stuff I haven’t read before. Still very fun!

Lumberjanes/Gotham Academy by Chynna Clugston Flores et al. —A crossover between two very fun comics both featuring teams of teens who deal with supernatural mysteries – I enjoyed it a lot! I wish there was more time for cross team interactions but it would be hard to fit in and keep focus on the story

Animated Batman—It’s nice to be into media that my kid also is interested in. She doesn’t watch anything with subtitles, but she likes Batman. So I’ve watched a handful of episodes of the 90’s animated Batman with her. (I started from where she’s gotten to before so not at the beginning) In terms of Bat-fam its not doing a lot, most of the kids/sidekicks aren’t in this and those that are aren’t around much (though I’m told they show up more frequently latter on) However the show itself is very well crafted! I’m impressed with both the animation (the style! The attention to detail) and the storytelling

  1. Ridiculous indulgent breakfast situation (though having now looked up Culinary Strata because A asked, I am extremely unconvinced that pistachio croissants with raspberries)... counts.
  2. Therapy session, spent entirely talking about One Thing (with tendrils), has left me feeling distinctly more settled.
  3. Today's primary Make Numbers Go Down project has been working my way through some of the short fiction I've had open in tabs since [mumble]. Highlight thus far is Naomi Kritzer's The Thing About Ghost Stories (cn parental death, dementia).
  4. The other New Thing I started consuming today is A Physical Education, which is extremely and often graphically about diet culture and disordered eating, but which 11% of the way through the audio file I am Very Much Enjoying. Further updates to follow. (The library only has audio, I apparently put a hold on it seven weeks ago though I can't at this point remember where I came across it, and The First Headphones I Have Ever Tolerated remain excellent. Shokz OpenRun Pro.)
  5. The Child liked the replacement mock cherries; spring flowers are excellent (we are firmly heading into daffodils now); Routine Dinner tonight DID work even though the app initially Frightened Me by claiming first available pickup was tomorrow morning.
